New EU regulation on nitrites and nitrates in cured meats take effect October 9
Starting October 9, 2023, new European Union regulation regarding nitrites and nitrates in cured and processed meats will be implemented, significantly impacting food producers across the territory. This initiative, established under EU Regulation 2023/2108, aims to minimize public exposure to potentially harmful substances linked to cancer risks.
The regulation amends the existing framework set out in Regulation (EC) No. 1333/2008, focusing on lowering permissible levels of nitrites and nitrates in food products. These additives, long used in the meat industry for their preservative qualities, play a crucial role in preventing bacterial growth—including that of Clostridium botulinum, which can cause botulism—and in maintaining the color and flavor of cured meats, sausages, and other processed products.
Under the new regulation, the allowable nitrite levels in cured meats will decrease from 100 mg/kg to 65 mg/kg. For non-heat-treated meats, the limit will drop from 150 mg/kg to 80 mg/kg. The maximum limit for sterilized products will pass from 100 mg/kg to 55 mg/kg.
Companies will need to adapt their production processes and formulations to comply with the new limits, ensuring that their products remain microbiologically safe while also meeting the stricter regulations. This adaptation may involve adopting new technologies and methodologies that can effectively preserve meat without exceeding the new additive thresholds.
Importantly, products that have already been produced and are in compliance with the old regulations will still be allowed to be marketed, providing a temporary buffer for manufacturers as they transition to the new standards. However, the pressure is on, as companies have less than a month to implement necessary changes to their recipes and processes, if they have not done it yet. As the deadline approaches, industry stakeholders are urged to pay close attention to these changes, as compliance will not only be essential for legal operation but also for public health.
